Seafood Stir-Fried Glass Noodles are a delicious dish that combines springy glass noodles, fresh shrimp and squid, and colorful vegetables. Easy to prepare and full of flavor, this dish is perfect for family meals or weekend gatherings.

Fresh shrimp, Fresh squid

Carrot. Onion, Mushrooms, Greens or bok choy, Spring onions and garlic

Seasonings: soy sauce, oyster sauce, pepper, and a little sugar, Cooking oil

HOW TO MAKE

STEP 1: PREPARE THE INGREDIENTS

Soak the glass noodles in clean water for 5–10 minutes until softened, then drain well. Peel and devein the shrimp. Clean and slice the squid into bite-sized pieces. Thinly slice the carrot, onion, and mushrooms. Chop the spring onions.

STEP 2: STIR-FRY THE SEAFOOD AND STIR-FRY THE VEGETABLES

Heat a pan with a little cooking oil and sauté the garlic until fragrant. Add the shrimp and squid and stir-fry quickly over high heat. Season lightly. Once the seafood is just cooked, transfer it to a plate to keep it tender and flavorful.

Using the same pan, stir-fry the carrot, onion, mushrooms, and greens. Add a little soy sauce and oyster sauce for flavor while keeping the vegetables crisp and colorful.

STEP 3: STIR-FRY THE NOODLES AND COMBINE WITH SEAFOOD

Add the drained glass noodles to the pan and toss gently to prevent them from sticking together. Season with soy sauce, oyster sauce, and pepper to taste. Finally, add the stir-fried shrimp and squid and toss everything together for 1–2 minutes until well combined.

STEP 4: SERVE AND ENJOY

Turn off the heat and transfer the seafood stir-fried glass noodles to a serving plate. Garnish with spring onions and a little black pepper. Serve hot and enjoy the springy noodles, fresh seafood, and crisp vegetables.
